- 2 cup water
- 1 cup quinoa, uncooked
- 1 cup blueberries
- 1 cup almond milk, unsweetened
- 1/2 cup almonds, sliced
- Boil water on stovetop; add quinoa and allow water to come back to a boil. Turn down heat to a low simmer, cover and cook until nearly all the water is gone. Remove from the stove, keep covered. Wait for 5 minutes and then fluff with a fork.
- Rinse the blueberries.
- Place quinoa into each of 4 serving dishes. Pour 1/4 cup almond milk into each bowl of quinoa, top with a handful of berries and some almonds. If a sweeter taste is desired, add honey or pure maple syrup.
- Serve any remaining blueberries on the side.
