Alligator Pear Salad

avocado salad recipe2 Did you  know Avocados are also known as Alligator Pears? (Wikipedia) If you think about it, it really does look like an alligator pear. Your kids may like this name better than ‘avocado’.

I don’t believe we’ve talked about Avocado’s enough on this site! Which is a shame, because we are currently addicted to this miracle fruit (or vegetable.. I’m not picky about categories). Your kids health will benefit greatly from adding avocados to their diet!

Health Benefits of Avocados:

  • Contains heart healthy Oleic acid
  • The special carotenoids in Avocados were shown to inhibit cancer cell growth.  But when the carotenoids were isolated and tested, they did not inhibit cancer.  Which concludes that it is the WHOLE avocado that has the health benefits!  These carotenoids are fat soluble, so the fat in the avocado assists the delivery of the nutrients into the blood stream.  (source)

Alligator Pear Salad

Alligator Pear Salad
Serves: 4

Alligator Pear Salad

  • 2 cups corn kernels
  • 3 ounces walnuts
  • 2 ripe avocados (sliced and chopped)
  • 1/4 cup lemon juice
  • 1/4 cup light sour cream.
Mix corn, walnuts and avocados together. In separate bowl, mix lemon juice and sour cream. Add to mixture to the salad, stir and serve. Tastes great chilled.

I’ll be honest. I live on the Gulf Coast. I really thought that this was a new recipe for Alligator tail. Ha! We eat it here, its tasty. This sounds good too though. The only trouble is, we can’t get good avocado here. It comes in on a truck and it either really hard (never ripens), or really squishy. And they are almost $2 each!

Thanks for the new name for avocadoes! I’ve been making my daughter an avocado smoothie lately (avocado, ice, milk, vanilla carnation instant breakfast) and putting it in a green covered cup to hide the color. She loves it, but keeps asking me what’s in it. now I can tell her alligator pears–she’ll love that!

Excellent recipe! Avocados are such a heat healthy food, and their soft texture is great for introducing new food to babies! I started my little boy on solids recently and avocado was one of our first foods.

Never knew what an avocado was until I was a teenager. Always called them alligator pears in New Orleans. They are easy to grow here and we grew up eating them either with just ketchup or putting chiken salad in each half. What a meal!!!
