There is no question there is mounting evidence of the benefits of fat in your kids diet! However, extracting fat from the whole food source, just for the sake of the fat, is inferior to eating the fat straight from nature! When you extract the fat (for it’s oils, etc.) you miss out on all the nutrients that go with it. Food sources of fat come perfectly packaged with fat soluble vitamins and minerals that provide so many more benefits to health and growth that the fat alone. So, if you want to get some essential fat (and protein) on the sweetest holiday of the year, go for our fatty eyeball avocado egg breakfast! We called it Alien Egg-o-Lanterns!
All you need is some avocados, or guacamole! When I went to look for guacamole, I was SHOCKED at how many tubs of guacamole didn’t even contain avocado! Several, literally only had “avocado flavor!” I ended up with Wholly Guacamole, because they actually had avocado as the first ingredient. I prefer to use avocados and make my own, but none of the avocados in the grocery store this day were ripe enough for mashing. They all were hard as rocks! If I did have avocados that were soft and ripe, I would have made my own guacamole using:
- 1 whole avocado
- 1 squeeze of a lime
- 1 dash of salt
- 1 teaspoon of chopped fresh cilantro
- half a clove of garlic
Then, we took the guacamole, and scooped it into a piping bag. I use piping bags a lot, and just snip off the corner, as to have a small opening to control where I want food. Sometimes I use a decorating tip, but my guacamole is too chunky to fit through a piping tip, so snipping off a corner of the bag works much better.
Then, using half of a hard boiled eggs, with the yolks removed, we piped our guacamole into the well of the egg. Then, topped the egg “eyeball” with a sliced olive (More fat!)
And of course with every good breakfast, we like it balanced! So, we paired our eyeballs with some toast and apples. We cut our toast with a pumpkin cookie cutter, and sliced our apples with a crinkle cutter.
And that’s it! A perfectly balanced breakfast to start your Halloween!
