Servings: 4 2 tacos

  • 1/4 medium onion
  • 4 ounce beef, ground, 95% lean
  • 4 ounce turkey, ground
  • 1 cup diced tomatoes, canned
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin, ground
  • 1/4 teaspoon oregano, dried
  • 4 ounce cheddar cheese
  • 2 cup lettuce, romaine
  • 1 cup corn, frozen
  • 1 medium tomato, red
  • 8 regular taco shells
  • 1 cup salsa
  • 1 medium cantaloupe

  • Dice onion. In a medium skillet, brown the beef and turkey with onion, 8-10 minutes. Drain.
  • Drain tomatoes and then add to skillet with chili powder, cumin and oregano. Simmer for 3-5 minutes.
  • Prepare the toppings: shred the cheese and the lettuce, drain the corn, and dice the tomato (removing seeds from tomatoes can sometimes entice kiddos to try them).
  • Fill taco shells with a small amount of meat, cheese, lettuce, corn, tomatoes, salsa, and any other healthy options you like.  If your kids don’t care for all the veggies ON their tacos, you can serve them on the side as a salad! (Serving size: 2 tacos, 1/2 cup cantaloupe)
