  • 1 cup flour, whole wheat
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ounce cream cheese
  • 1 cup Greek yogurt, vanilla
  • 1/4 cup jam, all-fruit
  • 8 wooden skewers
  • 1 cup strawberries
  • 1 medium bell pepper, orange
  • 1 medium cucumber
  • 4 ounce cheddar cheese


  • Whisk together flour, baking powder, milk, egg and vanilla; batter may be lumpy. Spray a large skillet with cooking spray and heat over medium. Pour batter by 1/8 cup full. Cook the first side until it begins to bubble and then flip. Continue to cook and additional 1-2 minutes. Continue until all batter has been used. Freeze leftover pancakes or store in the refrigerator.
  • Mix softened cream cheese and yogurt in a small bowl. Spread onto each of 4 pancakes. Spread jam onto the other 4 pancakes and then flip over onto the cream cheese pancakes to make a sandwich. Cut into quarters. Skewer pancake sandwiches with strawberries.
  • Cut pepper into strips and cucumber into rounds. Cube cheese or cut into sticks.
  • Divide all ingredients into each of four lunchboxes.
