1/2 Sandwich with Caprese Salad
Ingredients
- 4 cup spinach
- 4 ounce mozzarella cheese
- 1 cup cherry tomatoes
- 4 teaspoon basil, fresh
- 4 teaspoon vinegar, balsamic
- 4 teaspoon olive oil
- 4 slice bread, whole wheat
- 1 cup hummus
- 1 cup alfalfa sprouts
- 2 leaf outer lettuce
- 4 slice turkey breast, deli style
Serve With
- 1 cup carrots, baby
- 2 medium mango
Instructions
- Add spinach to a large bowl along with shredded mozzarella, tomatoes, basil, vinegar, and olive oil. Toss well and set aside.
- Layer 2 slices of bread with hummus, sprouts, lettuce, and turkey. Top with remaining 2 slices of bread and cut each sandwich in half.
- Serve each sandwich half with salad, carrots, and mango cubes on the side.
