I started blogging on Super Healthy Kids, way back in 2008!  One of the first blogs I read was Roni’s from Green Lite Bites.  I saw her post this recipe that she called “watermelon ice“. Roni posted it 7 years ago, and we’ve literally made it every summer since! Once the watermelon starts hitting the grocery stores, we take one home and make this “ice cream.

The simple, two step recipe is

  1. Blend it:  1 cup of watermelon, and 1 cup of yogurt. Watermelon Frozen Ice. So easy and delicious...you'll be making this all summer long!
  2. Freeze it:  Sometimes it’s less frozen and we drink it through a straw. Sometimes, it’s more frozen and we eat it like a slushy- half straw, half spoon. And sometimes we freeze it completely and eat it like ice cream! Either way, it’s sweet and delicious!  (I wish it were more red, but with the yogurt, it’s definitely pink!) Watermelon Frozen Ice. I like this idea, because I always cut up our entire watermelon right when I bring it home. By the time we get to the bottom of the bowl, we have small broken pieces. My kids do like eating the wedges with the rind on, but my chopped up pieces are so much cleaner.

Watermelon Frozen Ice

This watermelon Ice is perfect for a hot summer day. The sweeter the watermelon, the sweeter this ice dessert!

Ingredients

  • 1 cup watermelon pieces
  • 1 cup vanilla yogurt you can  use coconut vanilla if you need it dairy free!

Instructions

  • Blend watermelon and yogurt together until smooth in a food processor or blender.
  • Freeze until desired consistency.  2-3 hours for a smoothie like slushy, 4-6 hours for ice cream.

shame on your mean brother! I can’t ever remember your tummy being fat . . . don’t believe it!

Could you make this recipe with any kind of fruit? So peaches when they are in abundance on the tree?

Yeah mom, it would be fun to try this with lot’s of other fruit.
Jill: I used 1 cup of Watermelon, and one small 6 oz container of strawberry yogurt! It really was yummy. We were fighting over it.
