Who else is a huge french toast fan? I have always loved it! But I don’t love that it usually involves syrup or gobs of powdered sugar.

This stuffed berry french toast is the perfect solution! Getting fruit on the inside of your French toast gives it that sweet juiciness, that your kids won’t even need syrup.

And if you don’t have fresh strawberries on hand, don’t sweat it! You can thaw some frozen strawberries to use in this recipe and they work really well.

How to make berry stuffed french toast

While you may be thinking that it sounds like a lot of work to stuff a piece of bread, this recipe is actually really easy! You simply make a sandwich and then cook it like french toast.

Let’s get started! First, whisk your eggs, cinnamon, and almond extract. Don’t skimp on the extract or cinnamon! These really bring a lot of flavor that you’d miss if you didn’t add them.

Next, mix together the low-fat ricotta and sliced strawberries. Spread this mixture onto two slices of bread, then top each with another slice of bread. Squish the bread together so that the filling doesn’t leak out. Mine weren’t perfectly sealed and worked anyway.

Heat a skillet over medium heat. Add a little cooking spray or butter to keep the french toast from sticking.

Now dip the french toasts into the egg mixture and then place on the skillet, one at a time. Cook for several minutes on both sides, until the egg is fully cooked and the bread looks golden. You may need to sear the sides for a few seconds each too, if your bread is thick and still gooey on the sides.

Serve warm, right off the skillet. Sprinkle with a teeny bit of powdered sugar for extra flare – but it’s great without any!

  • Chop strawberries and mix with ricotta cheese.
  • Lay out two pieces of whole wheat bread. Spread berry and ricotta filling in the middle. Squish the two slices of bread together to make a sandwich and to secure the filling so it doesn’t spill out.
  • Dip the sandwich into the egg mixture on both sides.
  • Cook on hot griddle, on both sides until the egg is all cooked and no longer wet or runny.

That looks so yummy! If it wasn’t 10:30 at night, I’d probably go make some right now! Maybe in the morning though! 🙂

Sorry I haven’t responded Elisa- You asked if the stuffed French toast would freeze well, and I’ve never tried it! If I do I will let you know though. My kids can be little piggies when I make something yummy like this, and we never have anything leftover! 🙂
