Fresh Spinach Personal Christmas Pizza Trees

The kids are out of school for Christmas break!  I can't remember when it happened, but at one point, my life was easier when they were in school. Now, life is so much easier (and better) when they are on break!  We slow down in the morning, and spend more time together in the kitchen! What more could a mother ask for!  Spending time in the kitchen with your kids is a great way to connect.  We added a category a few months back called "Kids in the Kitchen".  We don't have that many posts in that category yet, but this one would definitely qualify!

These personal pizzas are a little different than regular pizza.  You could make traditional Christmas pizzas as we did in this post, but these are different because we

  • Cooked the crust first.
  • Then added a homemade white sauce.
  • then, topped it with FRESH vegetables!  This is where you can really get your kids involved.  We used the white sauce as glue.  You could provide for your kids a variety of fresh veggies including spinach, peppers, or tomatoes.  Your kids can decorate their trees to their hearts content.
  • And ate!

 

These pizzas are easy to eat because the white sauce acts as glue to hold it altogether.  The kids just picked up and ate it, just like regular pizza.  We've got some more fun Holiday meal ideas on our Christmas meal plan. Check it out here.

 

Fresh Spinach Personal Christmas Pizza Trees


Instructions

For our crust, we usually use:

  • 1 Cup warm water
  • 1 TBL yeast
  • 1 tsp sugar
  • 3 cup wheat flour
  • 1 tsp salt
  • 2 TBL olive oil

Knead with mixer or by hand for several minutes. Form into a ball. Let rise for 30 minutes. After 30 minutes roll out dough onto pizza pan. Let sit for 5-10 minutes until you can roll out more. Cut triangles our of the dough. Cut the sides slightly to make a tree.

 bake at 400 degrees for 5 minutes. Take out and top with white sauce.

White Sauce:

  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 garlic clove, minced
  • 1/2 cup shredded parmesan cheese

Spread the white sauce on your pizzas, and top with fresh veggies, starting with spinach.

What a clever idea! I enjoy reading your posts and usually trying to think how I could incorporate your ideas and recipes into my middle school FACS (Family & Consumer Science- Home Ec) classes. I promote fresh vegetables and whole grains (and the rest of MyPlate) but haven't pulled together many quick ways of making them interesting and easy for the kids. Thanks for the inspiration!
