Birthday Party Fruit Cake

Share

fruit party cakeWho says cake has to have flour, fat, and sugar?  Not us! In fact, I made this cute and quick”fruit” cake moments before my kids walked in from school.  The first thing they wanted to do was take a bite out of it! In fact, the neighbor boy got really close to it and proclaimed how delicious he thought it was.

Of course all I had to do was use:

  • 2-4 pineapple rings (from a can)
  • watermelon cut into rings
  • small slice of banana (to hold the candle)
  • 1 candle
pineapple watermelon cake

Adorable, right?  I got the idea from Produce for Kids, who right now has a bunch of easy recipes for breakfast, lunch, dinner, and snacks; all using produce of course!  These “Ideal Meals” are part of a new campaign to help kids eat healthy, as well as donate money to the Children’s Miracle Network Hospitals.  Between May and July, by purchasing produce at participating stores, a portion of your money will be donated to local children’s hospitals.

Other produce for kids recipes I like include:

…and tons of more delicious fruits and veggie ideas that your kids will love!

I am a big snacker. I can’t go more than 2 hrs without eating, so I have to be thoughtful about my snacks to ensure a healthy day of eating. I think that making smoothie pops would be a great summer treat! or dessert :)
