While we love fresh fruits and veggies best, sometimes it is not always possible to eat them in their fresh form because of seasonal growing.  We try to buy our fresh produce in season because it is a better price and is usually at its peak ripeness.   If we can’t eat them fresh, we definitely still love them frozen! This Mini Spinach Quiche recipe is one of our favorites.  The first time we made it, not only did all three of my kids eat a whole mini quiche,  they were asking for more!  A rare event in our home, even with dinners they like, they usually never want seconds.  The spinach was not disguised in any way. They all knew it was there, and they all loved it.  My dreams are coming true.  The dream: Kids aware and desiring to add more fruits and vegetables to EVERY dish they prepare.

We baked these in our favorite silicone cups.   These are a perfect size to portion out a meal for little kids.  You can bake, freeze, and microwave them without fear. We love them and have used them for so many different recipes.   Check out the other things we have used them for here.

We used a puff pastry for this recipe, but you can definitely make your own crust.  Puff pastry turns out so flaky and yummy and saves you a lot of time if you are in a hurry to make dinner.  We will keep a box in our freezer and then just pull it out when we need it.

Mini Spinach Quiche

Ingredients

  • 10 ounce spinach, frozen
  • 1/2 cup, chopped onion
  • 1 tablespoon olive oil
  • 1/2 cup mozzarella cheese
  • 1/2 cup cream cheese, low fat
  • 1/4 cup Parmesan cheese, grated
  • 2 large egg
  • 4 shell puff pastry, frozen, ready-to-bake

Optional

  • 1 cup rotisserie chicken

Instructions

  • Thaw frozen spinach and squeeze all the water out.
  • Chop an onion.
  • Pour 1 tablespoon of olive oil in a skillet and saute for 3-4 minutes.
  • In a bowl, combine spinach, onions, mozzarella, cream cheese, Parmesan cheese, and 2 eggs. Optional: we sometimes add some shredded chicken, especially if there are leftovers.
  • Cut puff pastry into small squares, that could fit into a muffin cup.
  • Fill the muffin cup with the first layer, a square of puff pastry or pie crust.
  • A melon ball scoop of the cheese and spinach mixture.
  • Top with a second square of puff pastry or pie crust.
  • Bake at 400 degrees for 30 minutes, or until it is cooked all the way through.

I have been reading your blog for several months now, thank you for all of the healthy tips! I wanted to share the following story with you (I’ll keep it short, I promise).

My son, who is three, has always loved raw vegetables. Everytime we go grocery shopping he gets to get a salad from the salad bar as a treat. An older woman stopped the other day and looked at what I was putting in the bowl (spinach, tomatoes, green peppers, chicken, feta cheese, craisins, and some pineapple) and said, that looks like a great lunch for your Mommy. My son looked at her and said, “That is my salad, salad is my favorite”. Her jaw dropped to the floor and asked does he really eat all that? And I proudly said, “Every bite”.

It was a proud Mommy moment. *Pat myself on the back!*
