- 1 Cup sliced celery
- 1 cup chopped onion
- 1/8 cup parsely (fresh)
- 1 clove garlic
- olive oil.
Sautee all ingredients in large pot. Then add:
- 5 cups beef broth
- 1 can (14oz) chopped tomatoes, drained.
- 1 cup chopped carrots
- 2 cups chopped cabbage
- 1 tsp italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
Bring to a boil, and simmer for 1 hour
Stir into soup
- 1 can kidney beans, drained and rinsed
- 1 can garbonzo beans rinsed and drained
- 1 cup macaroni noodles
- 1 1/2 cups sliced zucchini
- Ground Beef (optional)
Cover and simmer for 20 minutes. Garnish with parmesan cheese.
