Minestrone
  • 1 Cup sliced celery
  • 1 cup chopped onion
  • 1/8 cup parsely (fresh)
  • 1 clove garlic
  • olive oil.

Sautee all ingredients in large pot. Then add:

  • 5 cups beef broth
  • 1 can (14oz) chopped tomatoes, drained.
  • 1 cup chopped carrots
  • 2 cups chopped cabbage
  • 1 tsp italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Bring to a boil, and simmer for 1 hour

Stir into soup

  • 1 can kidney beans, drained and rinsed
  • 1 can garbonzo beans rinsed and drained
  • 1 cup macaroni noodles
  • 1 1/2 cups sliced zucchini
  • Ground Beef (optional)

Cover and simmer for 20 minutes. Garnish with parmesan cheese.
