Step out of your boring PB&J rut by making the kids favorite sandwich into a pizza. I actually woke up this morning thinking I had a new and clever idea, only to find out from Google that Disneyland actually serves Peanut Butter and Jelly Pizza… ha ha. Who knew? Not me.
Anyway, I like how ours turned out. First I made some super speedy crust with some Fleischmann’s yeast that apparently is made for pizza crust, and followed the recipe on the package. (Don’t ask me if it’s truly different, cause I don’t know). You can use any pizza crust recipe of course. This one however, had no rise time, zero!
Then, I rolled out the dough and cut small circles with a bowl as my cookie cutter. My circle cookie cutter was a little too small for my liking.
Then I placed the circles on a cookie sheet and baked at 425 for about 8 minutes.
The first batch did not turn out. My circles got super puffy.
So, the second batch I made, I lowered the temperature of the water (water too hot may make the dough rise too much in the oven), I flattened the circles more, and I pierced them with a fork before baking. Batch #2 came out much better (even though it was the exact same recipe)
Then we simply spread some all natural peanut butter and jelly on the circles. Also try adding other sandwich toppings. You could do the same thing with avocado and tomatoes; hummus and olives; turkey and cranberry sauce; etc.
