Today, I’m spending the day with my family at Capitol Reef, Utah. Utah is know for having the most amazing slot canyons. Millions of years of moving water has eroded rocks, creating large walls on either side of its path. Walking through slot canyons is the best kind of hiking for kids because the terrain is generally flat, and the walls are filled with amazing colors and formations. Here is a slot canyon we found last summer near Kodachrome:
So, today we are exploring Capitol Reef for the first time. Capitol Reef has two things I love- the slot canyons and a fruit orchard with trees that are over 100 years old. Right now the peaches are ready to pick, so we’re headed there first! Rumor has it that you can also buy some fresh peach pie from a little shop inside the park! Mmmmm..
I start the post this way for two reasons-
- We dry food to make it easy to take on long day excursions.
- And, we dry food to preserve fruits, vegetables, and herbs we pick from a garden, or that we can find at good prices!
and I’m starting with a recipe we have been making from my favorite dehydrating book, Mary Bell’s Complete Dehydrator Cookbook. She calls them breakfast cookies, however if I try to call them breakfast cookies, the kids would be quite disappointed (expecting one thing and getting quite another). So, we call them High Energy Breakfast Chews- which is exactly what they are!
This recipe was simple. We used
- 1 cup fruit (we used mango!)
- 1/2 cup powdered milk
- 1/3 cup orange juice concentrate
- 1 teaspoon vanilla
- Toppings of your choice- including chia seeds, millet, coconut, flax seeds- ANYTHING!
Blend in a blender. Drop by spoonful onto parchment paper or a silicone mat. Top with a variety of toppings (this is where the kids can get creative and put what they want on their own chews). Place in dehydrator or low temperature oven until dried.
The taste: Because of the orange juice they are a bit tangy. The texture is like a fruit snack- more rubbery than dry like fruit leather. We love the addition of chia seeds because it adds a component of fiber, protein, and fat!
We have a bag of these for our trip today. You can take these on the go if you miss breakfast. Or even send these to school in a lunch box.
