Triple Melon Salsa Snacks
Late summer means loads of melons at road side markets here. We've got some delicious watermelon and cantaloupe from the Green River. We like to scoop our melons into melon balls, skewer them on sticks, or chop them finely to make a salsa snack. This one did not disappoint. We used:![]()
- Chopped watermelon
- Chopped cantaloupe
- Chopped honeydew
- Chopped green peppers
- chopped yellow peppers
- Canned pineapple
- Plus 1 TBL. of pineapple juice from the can.
An easy and yummy way to eat fruit salsa is to use whole wheat tortillas. We cut our tortillas into shapes we like. Sprayed on both sides with cooking spray. Sprinkled with cinnamon sugar. Then cooked in a 400 degree oven for 8 or 9 minutes.
