Triple Melon Salsa Snacks

Late summer means loads of melons at road side markets here.  We've got some delicious watermelon and cantaloupe from the Green River.  We like to scoop our melons into melon balls, skewer them on sticks, or chop them finely to make a salsa snack.  This one did not disappoint.  We used:melon salsa3

  • Chopped watermelon
  • Chopped cantaloupe
  • Chopped honeydew
  • Chopped green peppers
  • chopped yellow peppers
  • Canned pineapple
  • Plus 1 TBL. of pineapple juice from the can.

An easy and yummy way to eat fruit salsa is to use whole wheat tortillas.  We cut our tortillas into shapes we like.  Sprayed on both sides with cooking spray.  Sprinkled with cinnamon sugar. Then cooked in a 400 degree oven for 8 or 9 minutes.

Watermelon has many benefits and is a great part of your kids diet.  According to WHFoods:

Wow! Now that is a good reason to eat watermelon!

I just found your blog and loving it! I've been printing things off left and right all day. My co-workers all want to know the site address to check it out. This is exactly what I have been looking for to help me plan healthy meals not only for my toddler but also for myself. Thank you for taking the time to prepare the meal plans. and post these amazing healthy snack options that actually look enticing and delicious. One quick question about this recipe... did you guys use cream cheese to hold the fruit slices in place? I think that is what it is but not sure?

Absolutely love the shape of the tortillas - I'm going to try this one myself. My son loves fruit kebabs (in fact anything on a stick is consumed with gusto) so I'm sure he'll love these too! They look good fun to make as well. What's the 'white' on the base of the tortilla? Lovely site and great ideas! Thanks

This looks so good!! I am hoping it will be a good way to introduce peppers to my kids. I think mixing it with the fruits they love would be a great way to do that!! Thank you!!
