Sweeten up Lunch with Apple Pie Sandwiches

Are you serving your kids another peanut butter and jelly sandwich today?  When lunches get boring this summer, change up the fillings for your sandwich!  I'm going to post more sandwich ideas as we get closer to school starting again, but wanted to share this one we had for lunch today!  We named it Apple Pie Sandwiches because of its blend of cinnamon and apples.

We kept it simple by using:

  • Toasted whole wheat bread
  • Low fat spreadable cream cheese
  • Apples, chopped finely
  • Dash of cinnamon
  • Dash of nutmeg
  • Optional: Sweetener like a tsp. of honey, brown sugar, or other sweeteners

We mixed the apples, cinnamon, and cream cheese in a bowl, and scooped it onto our toasted bread.

Plus, this is a great way to get in a serving of fruit for the day!  Serve it with sliced carrots, fresh green beans, or more chopped apples.

Neat! We do this but with cinnamon applesauce as a filler instead of the chopped apples. Grilled applesauce sammies are a favorite around here. :)
