Sweet and Salty Hash Browns Recipe

We’ve got a great recipe for breakfast this morning! Russet potato plus sweet potato hash browns!  The combination is perfect with some extra vitamins from the sweet potatoes and a little familiarity for kids that need it from the russet potatoes.

Sweet potatoes

  • Vitamin A, C and manganese
  • Some studies show the vitamin A in sweet potatoes are easier to absorb than the vitamin A in leafy greens.
  • Antioxidants in sweet potatoes improve digestive health.
  • They are great for regulating blood sugar.

So, lets give our kids some sweet potatoes already. Start with this Hash Browns Recipe and your kids will turn into big fans of the sweet potato.

RECIPE:

  • 2 russet potatoes
  • 1 sweet potato
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil

Peel

Add oil to a non-stick skillet (you can also use cooking spray if you coat heavily, because these will stick to the pan).  Pour half of your potato mix into your skillet and spread until you have an even layer.  Press to flatten with the back of a spatula.

Cook on skillet until edges begin to brown.  Cut into chunks that are easily flipped, (about four), and flip to cook the other side.

Peel and shred potatoes

Mix potatoes, egg, flour, and salt in a bowl

Mix altogether

Spread into greased, non-stick pan

Press to flatten and flip

Remove from pan

What do you think? Would your kids like these?  Those origami fry bags are fun to make, but hash browns are a little too wet and greasy to serve them that way. But if you want to, I get my pattern here. It works really well for jicama and carrots though.

My kids loooove latkes! I make them with just sweet potatoes, and it’s one of the few ways they’ll eat sweet potatoes without complaining. They’ll like this recipe even more, though, because of the white potatoes. Can’t wait to try it!

I have a questions, if I cook this in the morning, do you think it can be packed in my little one’s lunch box and serve at about 12:30 at noon?

Hi Amy I just made these there delicious!!! And my daughters are eating them !!!! Though I followed the recipie mine were not crispy they were like pankackes lol but the taste was great Im wondering if its because I used bread flour instead of all purpose flour ( I ran out that’s why I substituted it ) what do u think?

Karla.. I doubt the flour had anything to do with it.. Although it’s not healthy, the more oil you use, the crispier they will be. 🙁
