Sweet and Salty Hash Browns Recipe

We've got a great recipe for breakfast this morning! Russet potato plus sweet potato hash browns! The combination is perfect with some extra vitamins from the sweet potatoes and a little familiarity for kids that need it from the russet potatoes.
Sweet potatoes are a great food to add to your families diet. Sweet potatoes contain:
- Vitamin A, C and manganese
- Some studies show the vitamin A in sweet potatoes are easier to absorb than the vitamin A in leafy greens.
- Antioxidants in sweet potatoes improve digestive health.
- They are great for regulating blood sugar.
So, lets give our kids some sweet potatoes already. Start with these hash browns and your kids will turn into big fans of the sweet potato.
RECIPE:
- 2 russet potatoes
- 1 sweet potato
- 2 tablespoons all-purpose flour
- 2 eggs
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Shred the potatoes until you have approximately 2 cups of shredded sweet and russet potato. In a bowl, combine potatoes, flour, egg, and salt. Stir until well mixed.
Add oil to a non-stick skillet (you can also use cooking spray if you coat heavily, because these will stick to the pan). Pour half of your potato mix into your skillet and spread until you have an even layer. Press to flatten with the back of a spatula.
Cook on skillet until edges begin to brown. Cut into chunks that are easily flipped, (about four), and flip to cook the other side.

What do you think? Would your kids like these? Those origami fry bags are fun to make, but hash browns are a little too wet and greasy to serve them that way. But if you want to, I get my pattern here. It works really well for jicama and carrots though, like I did here and here.
