Stuffed Berry French Toast
Good morning! I think this may be my last breakfast post for awhile. I feel like I've been posting too many. I need to try more vegetable recipes and dishes for the sake of my family! But this was too good, I had to share!
Getting fruit on the inside of your French toast gives it that sweet juiciness, that your kids won't even need syrup. Of course, strawberries aren't exactly in season right now, but these were frozen from the spring, and tasted perfect in the middle!
Berry Stuffed French Toast
- 2 eggs
- 1/2 tsp. almond extract
- 1 tsp. cinnamon
- 4 slices whole wheat bread
For filling
- 1 Cup chopped berries
- 1/2 cup low fat ricotta cheese
Lay out two pieces of whole wheat bread. Spread berry and ricotta filling in the middle. Squish the two slices of bread together to make a sandwich and to secure the filling so it doesn't spill out. Dip the sandwich into the egg mixture on both sides. Cook on hot griddle, on both sides until the Egg is all cooked and no longer wet or runny.
Health Tip: Frozen fruit retains the vitamins and minerals as fresh fruit. Freezing your produce at the peak of ripeness preserves the vitamins. You can feel good about serving your kids frozen fruit. It's convenient, inexpensive, and good for them.
