Soup for Supper

p1080006-winceThe vegetable soup for dinner last night didn't exactly bring the kids running to the dining table.  But when I told them we were eating the soup out of bowl made from bread, they literally did come running to see what I was talking about.  They were excited about their bread bowls.  We tried this recipe for Vegetable soup.

Soup is a must for my new meal weekly meal planning.  Here are ten reasons soup should be on yours.

  1. Its economical!  Soup is one of the cheapest dinners around.
  2. Its a great way to get extra vegetables.
  3. It can be hassle free if you chop up your vegetables ahead of time then just assemble in a crock pot to simmer all day.
  4. Non-cream based soups are generally lower in calories, yet more filling.
  5. It can be them main dish, or a side.
  6. It warms you up in the winter.
  7. Makes a good freezer meal.  (Make a double batch and put half in the freezer.  You'll have another meal for a busy night).
  8. Makes a great meal for a needy neighbor.  Make one soup in a huge pot, and you should have enough for two families.
  9. Great way to add heart healthy herbs into your diet.
  10. Great way to add beans into your diet. 1 cup a day is the goal!

Our favorite is Potato Soup. Do your kids have a favorite?

Chicken tortilla soup,, is my 4 year olds favorite. My 3 year old likes any with ground beef or broccoli and cheese.

I agree with all of your reasons for soup! I always cook a double batch and freeze half for those days when I just don't feel like cooking. Plus, with all of the liquid, soups are generally filling without being calorie laden (unless cream is the liquid). That said, I rarely will have soup on my own. I like soup, but it doesn't always do it for me. But, my hubby is a HUGE soup fan, so we do have it quite often. Hoping that you'll share more soup recipes!

Yes, I stole a great Southwest Chili recipe from a friend and Darrell and I crave it all the time. The best part is that it is made from ingredients I always have at home! 2 cans Mexican stewed (or something similar) tomatoes 1 can green chili's 2 cups water 1 can corn (drained) 2 cans black beans (drained and rinsed) 1/2 lb. ground beef or italian sausage cooked 1 medium onion chopped 3 cloves garlic minced 2 tsps. cumin Salt to taste Puree the tomatoes and green chili's in your blender. In a soup pot cook the onion in a little bit of olive oil until it begins to become transulcent then add the minced garlic. Cook 2 additional minutes. Add all other ingredients and bring to a boil. Simmer 15 minutes and serve with tortilla chips. It is THE BEST!!!

I just make chicken soup with rice and veggies for the kids and they enjoyed it. I think it would have been a bigger hit with bread bowls. Can you buy them in a store?

Thanks for all the soup ideas. We are always looking for new ones. I did get the bread bowls at a local grocery store. I have never tried to make them on my own.

We have soup at least once, and sometimes twice a day at my house. The children's favorite is barley soup.

The best soup i make is when I have left over vegetable. Put the veggies in a big pot, fill with water. Cook for 30 minutes and blend it till come creamy. Serve with it fresh bread and you'll have a grate time with the family.Children love it!! ( Don't tell whats is in. tell is a secret) princess filomena
