Red, White and Blue Brunch Bruschetta
Traditional bruschetta is tangy, garlicky and down right delicious. Most of the time it is served on toasted bread of sorts, and I have found it is a little bit tricky for my kids to eat. Their little teeth have a hard time crunching through a toasted baguette.
This patriotic bruschetta is a fun fruit twist on the traditional tomato bruschetta and is much easier for kids to eat.
First thing, get your red, white and blue. Strawberries, yogurt, and blueberries.
Next get a soft English Muffin. We chose a whole wheat cinnamon raisin English muffin. You can lightly toast it, or just leave it as is.
Cut up your strawberries.
Add your blueberries.
Then mix in the yogurt.
And add a squeeze of lime for a refreshing citrus taste.
Then serve it up to your patriotic kids. A super healthy way to start off your 4th of July celebrations!
