Rainbow Oatmeal Bar

DSC_0794Put a little fun into your kids breakfast by giving them choices of their breakfast fruits!  The amazing thing about fruits and vegetables is the color!  The amazing Kia from Today I ate a Rainbow said about her own daughter:

We knew that if she ate produce from all the main color groups every day, she would be getting a good variety of vitamins, minerals and phytonutrients

Different colors in our fruits and veggies provide different nutrients.  So, why not give kids the opportunity to eat a variety of colors of fruits and veggies, all for breakfast!

So, for letter R week, we've made a rainbow bar of oatmeal. The idea was easy. I used a BIG bowl, and cooked 2 1/2 cups of quick oats in the microwave.  It took altogether about 6 minutes (in intervals of stirring in between).  Then I prepared bowls of fruit using fresh, frozen, or canned (peaches).  The kids can scoop out some oatmeal, and then add whichever fruit they are interested in. I thought it would be fun to use the muffin tin idea, to put it altogether.  Here are some fruit ideas that go well with oatmeal:

Red

Blue/Purple

  • Blackberries
  • Blueberries
  • Grapes
  • Plums
  • Raisins

White/Brown

Green

  • Kiwi
  • Lime
  • Honeydew

Orange/Yellow

  • Peaches
  • Cantaloupe
  • Oranges
  • Carrots
  • Mango
  • Pumpkins
  • Lemon
  • Grapefruit
  • Papaya
  • Apricots

This is a great idea! Now I'm going to be thinking "muffin tins" throughout the day. That could work for lots of foods/meals.

This is the most adorable thing! I would've loved this as a kid. Who am I kidding... I would love this now:) I can't wait until my 10 month old son is old enough for me to be able to do fun things like this with him. Thanks for the idea!

I love this idea and all the colors. They could use this for yogurt sundaes in the morning too. I Jenny's idea about it being for meals thru the day too. We have tons of muffin pans too, can't wait to try it.

What a fun idea!! My son ate plain oatmeal every day for almost a year...poor guy. He's now a bit tired of it (to say the least!) so perhaps if I make it fun and colorful like this, he'll try it again.

Such a cute and nutrition idea! Kids (and adults) like to eat things they choose to eat. So this is awesome!

Hi , just a quick question. Is that actual oatmeal in the muffin tin? What is in the oatmeal to make it pin? My daughter would love this! Thanks:)

Yes it's all oatmeal in the muffin tin. It turned pink when I added raspberries (you meant pink when you said "pin", right?) Thanks for reading

That was just to show the different options. A picture with 12 different bowls is hard to do.
