Quinoa: Take 2

p8300111If at first you don't like something, (or your family), try-try again!  When we first tried quinoa (Keen-wa), we didn't care for it.  I thought I would never eat it again.  However, my sister in law told me the other day that her kids DEVOURED it! She literally said devoured.  I knew I had to give it another try.  Sometimes its just a matter of finding the right recipe or way to cook it.

Why eat Quinoa?

  • Its a complete protein source, meaning it has all 9 essential amino acids.  A great compliment to any vegetarian diet.
  • Its cheap if you can buy it in bulk.
  • Technically Quinoa is a seed, not a cereal grain, so those with gluten issues can eat it.
  • It is high in the amino acid Lysine, which is essential for tissue growth and repair.

So, thanks to Beth, who sent us the recipe she uses  from Allrecipes, for Quinoa... that remember, her kids DEVOURED.  We tried it once again, and this time loved it. I'll definitely be looking for more ways to prepare Quinoa!

Quinoa and Black Beans (my kids loved it)

  • 1 Tsp. olive oil
  • 1 Chopped onion
  • 3 cloves garlic
  • 3/4 cup uncooked quinoa
  • 1 1/2 cup vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper

Brown the onion in the oil.  Add garlic, and cook for a few minutes longer. Add quinoa to pan with vegetable broth and spices.  Bring to a boil, cover, reduce heat and simmer for 20 minutes.

Add:

  • 1 cup frozen corn

Cook for 5 more minutes.  Then add:

  • 2 cups black beans, rinsed and drained.
  • Chopped cilantro (optional)

We love Quinoa. I can't believe you didn't like it at first. We use it in everything. I have made a pesto and added tomatoes, pine nuts and lemon zest to quinoa and that has been one of our favorites. I feel like for us it is the blank canvas and we just add flavors and veggies that we have on hand. Get creative with it and you will start to see how great it is to just have on hand for a quick healthy meal.

We've recently become quinoa converts here at our home. I just emailed you one of our faves. The black bean recipe looks yummy; can't wait to try it!

That is the exact same recipe that I tried when I made quinoa for the very first time. How funny! I rather love it but my 4 year old is not really a fan. Doesn't stop me from making it, though!

Great recipe! I like quinoa, but my 3 kids "hate" it. This one was a winner - all three ate it up! I love it when I can prove them wrong!

Maybe I'm just blind but I don't see the quinoa listed in the ingredients. How much do you use? BTW, I'm in Beth's ward and unfortunately totally spaced and missed the activity you were at but luckily found your website from a handout I got later. Great site! Can't wait to try your recipes!

Yikes Tiffany! I just re-wrote that post because it was getting a lot of traffic, and totally took out the quinoa! It's there now...lol 3/4 cup quinoa Sorry I missed you! Beth's my FAVORITE!!

I'm about three years late here, but I hope you still see comments. I don't usually cook with quinoa *or* beans; for the black beans, do I cook them before adding them or add them straight from the bag? Or do I buy canned? Thanks for the recipe!

Hi Ashley, I do see all the comments :) These were cooked beans- from a can. But you can also cook a batch of black beans and store them in the freezer for adding to dishes like this if you choose to avoid canned beans. But, either way- yes the beans must be cooked and canned, cooked and frozen, or just cooked. Don't add dried beans.
