Power Packed Pizza Sauce (or Pasta Sauce, or Dip, or.........the possibilities are endless!)

 

So my friend has a little boy who is somewhat of a picky eater and told me the other day that she pureed Great Northern beans into her son's pasta sauce.  Brilliant!  So then I thought, if you can add beans, what else can you add?  I may have gotten a little carried away - but  guess what?  My 3 year old seriously loved it.  I am.not.kidding.around.here.  She was literally eating it with a spoon.

I began by pureeing:

  • Marinara Sauce
  • Garbanzo Beans (you can use any white bean - or probably pinto or kidney also)
  • Carrots (I used puree because I already had carrots pureed)
  • Spinach
  • Spices (I added Oregano, a little black pepper and No-salt Italian seasoning)
This way you are adding Vitamin A, B-Vitamins, Fiber, Protein........this is definitely a sauce you can feel good about feeding to your kids.

I added a lot of beans and so mine turned out pretty thick.  It had the consistency of a hummus, but tasted like pizza sauce!  You can definitely add less beans.

Spread on your pizza crust.  I used this recipe for the crust, but used whole wheat flour.

Bake and devour!!  Verdict:  Both my 3 year old and 18 month old loved it.  I really think they liked it better than commercial pizza.  This dough recipe was a little softer and easier to chew for my girls.  Great for a fun weekend meal.

I found myself with some extra avocados this week and wanted some pasta so I decided to combine the two and see what I could come up with.

oh my gosh, this is genius. my youngest is so picky when it comes to fruits and veggies, so this will def tempt him. i'm trying it ASAP, thank you sooo much for keeping the picky eaters in mind with your recipes!

Grated veggies work well too. If you cook the saice long enough it all mushes down. We add carrot, zucchini, spinach and lentils (any type work well but my favourite is red with tomato sauce or green with Bolognaise). Pumpkin/squash etc work particularly well in pizza sauce, we often do half tomato paste half mashed pumpkin.

I loved this idea so much that I tried it last night for dinner. I added pureed carrots and garbanzo beans into my pasta sauce. My 10, 15, and 17 yr olds never even noticed a difference.

I do this a lot. Pureed sweet potatoes and winter squash are good additions too; tames some of the acidity of the tomatoes.

Yum, I will have to try that on my next pizza. I would never had thought to add beans - great idea!
