Power Packed Pizza Sauce (or Pasta Sauce, or Dip, or.........the possibilities are endless!)
So my friend has a little boy who is somewhat of a picky eater and told me the other day that she pureed Great Northern beans into her son's pasta sauce. Brilliant! So then I thought, if you can add beans, what else can you add? I may have gotten a little carried away - but guess what? My 3 year old seriously loved it. I am.not.kidding.around.here. She was literally eating it with a spoon.
I began by pureeing:
- Marinara Sauce
- Garbanzo Beans (you can use any white bean - or probably pinto or kidney also)
- Carrots (I used puree because I already had carrots pureed)
- Spinach
- Spices (I added Oregano, a little black pepper and No-salt Italian seasoning)
I added a lot of beans and so mine turned out pretty thick. It had the consistency of a hummus, but tasted like pizza sauce! You can definitely add less beans.
Spread on your pizza crust. I used this recipe for the crust, but used whole wheat flour.
Add your toppings.........
Bake and devour!! Verdict: Both my 3 year old and 18 month old loved it. I really think they liked it better than commercial pizza. This dough recipe was a little softer and easier to chew for my girls. Great for a fun weekend meal.
