Peanut Butter Pinwheels

peanut butter pinwheelsYou know how sometimes you make pinwheels out of tortilla's, and they just won't stay rolled up?  Solution: Skewers!  These pinwheels are simple and easy to make.  We used:

  • All natural peanut butter (which I found for 0.13 per ounce last week and stocked up!)
  • Shredded apples (with a  cheese grater)
  • Shredded carrots (also used a cheese grater)
  • 1 Whole Wheat tortilla
  • 1 bamboo skewer

Spread the peanut butter on a whole wheat tortilla.  Top the tortilla with shredded carrots and apples.  Roll up.

These pinwheels can be a complete meal all in itself!  We've got

  • Protein
  • Healthy fats
  • whole grains
  • fruits
  • vegetables

That's all you need baby!

But the real question is, did my kids eat it?  They loved taking it apart.  They already like peanut butter and fruit sandwiches, so it wasn't a stretch.  The shredded carrots added a nice crunch, that took on the flavor of the apples.  So, yes, it was a success!

I never would have thought to grate carrots and apples and put on the roll up! Genius! And I love the idea of putting them on a skewer! You need to write a book about all the foods and snacks you can put on a stick! HAHA! I have made my own nut butter before (walnut) but don't do so on a regular basis.

This looks like fun and my kids might go for it at home on a weekend first before putting it in their lunch. It's funny my husband eats one or two pbj's everday no matter what, his mom says he started doing that around age 10.

Dawn- Every day? That's a lot of PB&J! Morgan: LOL. I can't take all the credit. Erica (my 10 year old) was watching ICarly one day and at the local restaurant they go to, the crazy shop owner put everything on a stick. It was a BIG stick that he walked around offering people food off of. I thought it was hilarious, and thus began my skewer posts :)

I made my own nutella this weekend with almonds and dark chocolate chips. Yummy. I want to try some other nut butters now.

My 6 year old would love those!!! They are all her favorite. Where did you find the natural peanut butter at such a good price? My husband had a little bit of a wide eyed moment when he was with me buying peanut butter the other day. I can't go back to the other stuff no matter how much cheaper it is but I do need to look for some lower costs. Thanks for the great idea!!

Mary- that sounds great! we'll have to try that. Macey's (Associate foods). It was on sale for 2.08 and the jar was 16 ounces. I went back the next day for more, and it was at 2.99. Bummer.

What a great idea! I love the heart you cut from an apple and put on the top. I am the mom of 4 and I can attest that sometimes a cute presentation means the difference between the kids trying it and them leaving the food on their plate untouched. We get our peanut butter at Kroger marketplace. They have a machine that grinds the organic peanut butter and you can get as much as you want. No added oil or sugar that way! It is actually quite a bit cheaper than buying organic natural peanut butter. If I ever get a vitamix, I will probably start making my own though.

I like the idea of adding carrots and apple to the sandwich. I have never made my own nut butter; it's on the ever growing to do list though!
