Mini Baked Omelet Bites for Kids

If you missed yesterdays new meal planning chart printable, (second row in the middle) get it today! I  know I'm promoting the heck out of that thing, but I'm just so in love with it I can't help it!

I have a new breakfast idea for today.  This baked omelet is super filling and perfect to start your kids day on the right foot.

Baked Omelet Bites

  • 1 tablespoon olive oil
  • 3 small potatoes, peeled and chopped
  • 1/2 cup peas (frozen is fine)
  • 1/2 cup corn (frozen is fine)
  • 4 eggs
  • 2 tablespoons milk (optional)
  • salt and pepper
  • Feta cheese (or other cheeses of your choosing)

Place olive oil in a skillet and add potatoes.  Stir for a few minutes until the potatoes begin to soften.

Add peas and corn to potatoes, and stir with the potatoes for about 2 minutes.

Pour the potatoes, corn and peas into a greased bread pan.

Crack eggs into a bowl and add milk, salt and pepper.  Pour egg mixture over vegetables.  Sprinkle with cheese. Bake entire loaf in oven at 350 for about 45-50 minutes.

Remove from oven when eggs are cooked through and knife comes out clean.

Turn loaf onto a cutting board, and cut slices from the baked omelet.  Cut in half again so you have mini squares.

Serve with cereal and fruit for a balanced breakfast.

Breakfast is an important way to start the day! Kids who eat breakfast are better behaved and do better in school.  So whip up some baked omelets today!

Love this idea! My daughter has to wake up really early for school so we like to keep frozen breakfast items on hand so that she can get a good breakfast without me setting the house on fire at 6 AM.

I've never tried it Miranda. :( If I do, I'll let you know! We eat a lot at our house, with very few leftovers. LOL
