Grab and Go Pancake Panini and New Meal Plan

I borrowed a panini pan from Natalie a few months back, and I have yet to return it. We love it for lunch as well as breakfast.  It turns a regular meal into something a little more fancy.  One of the first panini's we tried was this pancake panini.

To make a pancake panini, simply

  • follow the recipe for any pancake mix,
  • and then make a sandwich out of it.   This one had an egg, cheese, and spinach.
  • Then, we grilled the finished sandwich on a panini pan.  So easy!

There are a million different sandwiches you could make with your pancake panini:

  • Peanut Butter and Jelly
  • Ham and cheese
  • Turkey and Avocado
  • Pinto beans and cheese.

Although this breakfast obviously takes a few extra minutes in the morning to make (OK, maybe 10), you can take it on the go if you run out of time.

Here are the meals we have planned for this week.  If you are new here, we plan our weekly meals to share with you that are not only can win over your kids tastes,  but incorporates loads of fruits and vegetables.  If you can make half your kids meal fruits and veggies, even if it's just for one meal each day, they will be healthier than 98% of kids in America.
