Fresh Mexican Pizza for Healthy Kids
Even though I paid $40 for a blanket on the beach my brother in law paid $10 for the next day, I still love Mexico!![]()
So, we decided to talk about Mexico today. Some common foods in Mexico also happen to be some of our favorite healthy foods. They include:
- Avocados
- Corn
- Tomatoes
- and beans!
So, we decided to incorporate all of these foods onto our pizza tonight. There are two parts to making this pizza. First is the cooked toppings, second is the fresh toppings.
We started with a homemade whole wheat pizza crust.
- 1 Cup warm water
- 1 TBL yeast
- 1 tsp sugar
- 2 Cups white flour
- 1 cup wheat flour
- 1 tsp salt
- 2 TBL olive oil
Knead all ingredients with mixer or by hand for several minutes. Form into a ball. Let rise for 30 minutes. After 30 minutes roll out dough onto pizza pan. Let sit for 5-10 minutes until you can roll out more. Keep doing this until it is able to stretch the entire size of the pan. Once rolled out, bake at 400 degrees for 5 minutes.
After you bake the crust for 5 minutes, Top it with pureed pinto beans, or no fat added refried beans and shredded cheese.
Bake again for about 5-7 minutes.
Then, the best part- top with fresh toppings and eat. We used:
- Chopped tomatoes
- Sliced avocado
- Shredded Lettuce
- Green Onion
- and Cilantro
