Freezer Meals

img_1803.jpgI got crazy yesterday and made 17 Freezer meals!  Summer is coming, and I want to spend less time in the kitchen.  So, I attempted one weeks worth of freezer meals  and my pile just kept growing and growing.  What I love about this idea is without worrying about a meal, I can spend more time preparing salads and vegetables to eat with the meal.  My dinners averaged about $5 per dinner, a little less for some.

I probably won't want to do all the meals in one day again. So my plan is to eat 3 or 4 of them a week.  Then one or two days a week I'm going to make a double dinner and freeze the other pan for later.  Then I can keep replenishing the freezer supply.   And then 1 day a week I am reserving as beans and rice night.  I really want to start cooking with beans for the cost and the health of it.  Plus we have 50 pounds of dried pinto beans for our food storage.  I need to start cooking with them.  So if you have any good bean recipes, please post.

Here are the meals I made:

  • 3 lasagnas
  • 2 Beef and Broccoli
  • 2 Taco Soup
  • 1 sloppy joe
  • 2 Sweet Pork for burritos
  • 1 bag plain chicken
  • 24 Chicken Pillows
  • 1 Bag Hawaiian Chicken
  • 2 Pans Spinach and chicken Manicotti
  • 1 Chicken pot Pie (just the filling because my pie crust did not hold together.)

What an inspiration! I thought I was doing good by making one large pot of soup and freezing it! Now I know to come to your house when I have nothing in my freezer! Amy, what are you using to store the meals in the freezer? Do you need your seal a meal back?

Come over anytime mom, and I don't think I want it back yet, but I may borrow it. Lisa; I only got that organized cause I was inspired by you asking me to get organized. Glad your SIL loved the pancakes. It really is a good recipe.

Holy Cow! That was a lot of work for one day! How did you package them all? Is that butcher paper in the picture? I have wanted to do this type of thing in the past but wasn't sure how to do it. In a few months when I might be up for this type of thing, can I come pick your brain? Also, I have a good beans and rice recipe that I got from someone on my mission, I haven't made it in forever, but I'll look for it and post it for you.

Liz, it's Reynolds Freezer paper. It was about 5 dollars for tons of it. I wrapped the meal in a freezer ziploc bag first, and then covered it in the reynolds paper. I thought when I was buying it that it was reynolds freezer foil, but it turned out to be paper. Oh, well, I think it will work better.

I am teaching a freezer meal class in Relief society and was excited to see your success.Thanks for sharing. Try a banana split desert by layering crushed Graham crackers,ice cream, bananas,cool whip and drizzled chocolate sauce. Freezes well for several weeks and is great for unexpected company.

Hi jessica- In 2008 blogging was SOOO different! It was more about me and what I was doing in my life. So, no , there were no recipes associate with this post. I will however RE-DO this post and find some great recipes to link to! Stay tuned :)
