Cinco de Mayo Mini Beany Cheese-tada
Cinco de Mayo is just around the corner, and what better way to celebrate than with Mexican Inspired Food! One go-to website that always has amazing ideas for healthy celebrations is Produce For Kids. They were the inspiration for this delicious fruit cake I posted way back. Today, they are the inspiration for our mini Beany Cheese-tada's! We made them mini, simply by cutting our corn tortillas in small circles.
- 2 medium (6-inch) corn tortillas
- ½ cup mashed pinto beans (drain if using canned)
- 2 oz. grated Monterey Jack cheese
- ½ cup shredded Romaine lettuce
- ½ cup grape tomatoes, cut in halves
Toast tortilla shells to desired crispiness. Spread heated mashed beans equally on top of the tortillas. Spread half of lettuce, cheese, tomatoes and salsa on each.
