Broccoli and Carrot Biscuits

As I was pureeing some broccoli and carrots for some Broccoli Orzo, I noticed how pretty the vegetables were after they were all crumbled up together! I thought about spreading it on something, and then I thought of incorporating it into our biscuits!

Now, I don't want to mis-lead children of the world!  This is not a "hidden veggie" recipe.  In fact, these biscuits do in every way taste like broccoli! Which is good for those kids that like broccoli.  And it may even be good for those kids who CLAIM they don't like broccoli, but have never really given it a chance.

Either way- All I did was incorporate the processed and chopped carrots and vegetables, into a standard biscuit mix (I used the "heart smart Bisquick", but I've also seen recipes for homemade Bisquick.)

STEP ONE: CUT VEGGIES TO FIT IN FOOD PROCESSOR

STEP 2: CHOP VEGGIES IN FOOD PROCESSOR UNTIL THEY ARE ALL BLENDED

STEP 3: INCORPORATE VEGGIES INTO YOUR FAVORITE BISCUIT MIX

STEP 4: ROLL OUT BISCUITS AND CUT INTO SHAPES OR CIRCLES

STEP 5: ARRANGE BISCUIT DOUGH ONTO A PAN AND SPRINKLE WITH PARMESAN (OPT)

BAKE AT THE RECOMMENDED TEMP FOR YOUR BISCUITS (MINE WAS 450 FOR ABOUT 10 MIN)

STEP 6: EAT!!

The options for biscuit add-ins are endless!  You could add herbs, spices, fruits, nuts, etc.  What do you think would taste good?

Cute idea! I bet they'd be so yummy with some kind of veggie soup. I'll have to try this out with the biscuit recipe I usually use :D

I made these today and they were really yummy! I used a homemade biscuit mix that is half whole wheat. Even my 3 year old who claims that she does not like vegetables said she liked them and asked for another. How much of the puree did you use? I think I put about 3/4 of a cup in (with about 3 cups of biscuit mix), and I could taste it, but I didn't think it was overly strong.

Oh yeah, I also added about half a cup of shredded cheese to the mix. I forgot about the parmesan on top though.

This looks awesome! I'm totally going to make these and bake them a little lower for a little longer to turn them into teethers for baby. PS. If anyone needs a good whole wheat biscuit recipe to incorporate this into, go here: http://www.100daysofrealfood.com/2010/04/08/super-easy-recipe-whole-wheat-biscuits/
