Bacon, Eggs, and Burger Pancakes

My brother texted some pictures of his niece making some crazy, fun pancakes.  She had bacon and eggs, a burger, and a rainbow with a tree by it.  I  knew I'd have fun recreating it for the blog, and I really did!  I like getting artsy in the kitchen sometimes.

Quick tip on healthy pancakes

Unless I'm making specialty pancakes, like the Yam pancakes, I use our Master Pancake mix!  This mix is cheaper and healthier than a commercial pancake mix.  Then you can add any mix-ins you have in your pantry.  Things I've added to our pancake mix include:

  • Flax mealburger and fries pancakes
  • Oats
  • Corn meal
  • 7 grain hot cereal
  • Wheat germ
  • Rice cereal
  • berries
  • chocolate chips
  • bananas
  • peanut butter

Then I divided up the mix, and added some food coloring.  You can also use natural colors of course from berries, beets, spinach, etc.   Then with a squirt bottle, we made a hamburger, french fries (with cheese and ketchup on top), and bacon and eggs!  These pancakes aren't just for the little guys.  My 12 year old probably liked them them most! LOL

We like to add pureed beets to make the pancakes pink for our pretty princesses.

Those are so cute! I don't consider myself an artsy person at all, but those look like something easy enough for me to make! I know kids would totally love it if I did that too. How fun!

We like frozen raspberries. (They are the perfect temperature once the pancakes are cooked.) I just have to be careful not to stir too much.

We love to add pureed cauliflower (makes them light and fluffy), and any cooked and mashed winter squash-delicata is our favorite. We get them from our CSA so we call them our summer sunshine pancakes, yummy!

Great idea but I hate to see recipes that are filled with artificial dye which is horribly unhealthy for kids

We add fresh sweet potatoes, or off-season canned pumpkin, and cinnamon, yummy! And I've done letters or hearts but these designs are adorable, I'm going to have to come up with some natural colorings :)
