Hard boiled eggs alone are a perfect snack in my opinion. Many days when my kids walk in the door from school, they will have one for a snack.  I couldn’t be more thrilled.  Eggs have:

  • All 9 essential amino acids!
  • They contain natural occurring vitamin D
  • They promote healthy nails and hair
  • The combination of protein and fat make them a satisfying and filling snack.

Even though we eat them pretty quickly, the amount we hard boil for dying eggs usually exceed our normal consumptions. 

Top 11 Ways to Use Extra Easter Eggs

  1. Egg Salad Sandwich.
  2. Deviled Eggs.
  3. Topping for Green Salads.
  4. Sailboat Snack. Slice a boiled egg in half and place a toothpick in the middle. Slice cheese into a triangle shape and slide on the toothpick as a sail.
  5. Loaded Cucumber Cups.
  6. English Muffin Pizzas
  7. Freeze for later.  You can chop hard cooked eggs and store in the freezer until you are ready to top your salads.
  8. Breakfast burritos. Use your hard boiled eggs instead of scrambled. Simply chop the eggs and add to the pan with shredded cheese to warm. Stuff your tortilla with your cheesy egg mixture and your other favorite burrito fillings.
  9. Avocado Toast. Sliced avocado and layer on toast, then slice boiled eggs and layer on top. Add your favorite seasoning to top it all off.

Yesterday I mixed up chopped hard boiled eggs with a bit of teriyaki sauce, dijon mustard and a little lemon juice, garlic, and paprika, then cooked it in a pan just to warm it up and put it over brown rice. It was really good! Kind of like hot egg salad on rice.

I love any kind of eggs, EXCEPT hard boiled. My daughter and husband like them though 🙂 It’s funny you ask about dying eggs-my kids are 8 and 9 and they haven’t asked about dying eggs yet this year, but my guess is they’ll want to dye them the night before. I say that you’re never to old to dye eggs!

I’ve been making an open face sandwich by putting raw spinach & a smashed up hard boiled egg on half of an english muffin for breakfast this week. I’m officially addicted! And my kids are now trying to steal my breakfast after they tasted it.

Greek Yogurt instead of mayo? (I actually use lite miracle whip). But yogurt would be so much more healthy. Does it really taste good?

Just, noticed this, nothing against eggs, but there are 20 essential amino acids, the most complete form of protein which contains all 20 being most commonly red meat and buckwheat.

Only 9 of the 20 amino acids are considered essential, meaning we must get them from food, and our bodies can make them.
