Banana Bread Muffin

banana muffins 2This is promised to be the last of three banana posts, as the mini bananas are gone now.  I realized I had never posted a banana bread recipe, so here is the one we like!

Banana Bread Muffins Recipe

  • 3/4 cup whole wheat flour
  • 3/4 cup white flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 cup granulated sugar
  • 1/8 tsp. nutmeg

Mix dry ingredients together.  In separate bowl, combine:

  • 2 eggs
  • 1/4 cup canola oil
  • 1 cup mashed bananas
  • 2 TBL plain yogurt

Mix wet ingredients into dry until it is all moistened.   Drop batter into muffin tin.  Then sprinkle over each muffin the following mixture.

  • 1/2 cup sweetened coconut
  • 1/2 cup crushed walnuts.

Bake in oven at 350° for 15-20 minutes, or until muffins are cooked through.  These were delicious on Christmas morning.

Big day for Erica today! She turned 10 yesterday, so I am taking her to the mall to get her ear’s pierced!  She is so excited, she literally can’t stand it!

I couldn’t catch him just right, but my nephew was devouring his muffins.

These are wonderful! My kids love them! I make them in a mini muffin pan and they are very quick and tasty. Thanks for sharing!

Hi Jeri- We do it two ways- either leave out on the counter overnight, and they’ll be thawed by morning. Or wait till morning and microwave for about 60 seconds.
