Easter Brunch Makeover!

Brunch! It could be my favorite meal. With delicious cinnamon rolls, cheesy eggs and potatoes, muffins the size of my head, Danish rolls, casseroles, and gallons of juice, it could also be the day that un-does all your efforts to keep your kids healthy.

There are alternatives to these high fat- high sugar traditional foods, that are in fact still delicious, and won’t leave you wanting a nap when it’s over!

Here are some of my favorite specialty brunch foods!

Instead of: Have this:
Orange Danish Rolls Orange French Toast
Jumbo Chocolate Muffins Bran Flax muffins
Egg and Cheese Casserole Quiche with Oat Crust
Cinnamon Rolls Cinnamon Toast on Whole Wheat bread.
Canned Fruit cocktail with creamy whipped topping (one of our families favorites) Fresh Fruit with yogurt for dipping.

Quiche with oat crust — yum! Danny has been asking about making a quiche. I’m going to go look at that.

We’re having ham, sweet potatoes, and collard greens. That doesn’t sound very Easter-y does it? I’m also going to try those bunny-buns featured in the Friend magazine. My daughter wants to try it. I’m going to try it with half the flour being wheat instead of all white. We’ll see!
