- Any Vegetables such as potatoes, carrots, onions, green onions, celery, garlic, peppers, pureed squash, etc.
cook vegetables in a small amount of olive oil till tender.
- Chicken Broth: Add enough broth to cover vegetables by about 1 inch.
Bring to a boil then simmer for 20 minutes. Then add:
- Shredded cooked chicken (if desired)
- 1 one ounce package ranch dressing mix
- 1-2 cups shredded cheese
In a seperate sauce pan, make a roux. Use 1/4 cup butter, to 1/4 cup flour, stirring constantly till thickened. Add this to your soup.
Simmer all ingredients together until all heated through and soup becomes creamy.
