Cottage Cheese Pink Salad

pink saladFruit salad is one of those dishes that have rich memories for me.  It started when I was growing up. We called it “Grandma’s Salad.”  That one consisted of a can of fruit cocktail and a tub of Cool Whip.  We had it on every special occasion and holiday imaginable. It was one of my favorite “salads”.

Then I got married and my husband’s family made “Pink Salad”. They used seasonal fruits, but added cottage cheese, Cool Whip, and a box of flavored gelatin.

Then I realized, the gelatin wasn’t necessary to get the pink flavor. And the Cool Whip could be eliminated altogether (have you seen the ingredient list on the Whipped Topping??!!?) It’s downright scary!

So, now, with berries and cottage cheese, we get the same great taste, and the same pink color!  This recipe is quite forgiving and you can pretty much add any amount of any ingredient, and it always tastes great.   Yesterday, for Valentines day I actually measured a few things…So, introducing our New Pink Salad:

  • 1 cup Cottage cheese
  • 1 cup yogurt
  • 3 cups berries (I used a thawed bag of frozen berries including raspberries and blackberries for the color)
  • 2 cup chopped pineapple
  • 2 bananas

We actually made a HUGE bowl of this because we were bringing dinner to a neighbor that just had a baby.  Check out the size of this thing!

And then our whole Valentines Dinner looked like this:

This looks yummy, kinda like my mom’s ambroshia (spelling??) growing up. Fruit and something white with coconut sprinkled on top. Great idea and my kids will love this.
