Hi, it’s Ciara here from My Fussy Eater. I’m excited to be back once again on Super Healthy Kids sharing some of my ideas and recipes for picky eating families. This month I have a super easy and delicious breakfast that’s perfect for the whole family!

So the kids heading back to school mornings are getting hectic again. With bags to pack, children to dress and lunches to make, the last thing we need is to be stressing over trying to prepare breakfast. And that’s why overnight oats are my absolute hands down favourite breakfast for busy days.

Simply throw a few ingredients together in a bowl tonight and when you wake up tomorrow you will have a delicious and healthy instant breakfast ready to go! This recipe provides a really well balanced breakfast for children, containing a good amount of fat and protein to fill them up and enough slow-releasing carbs to keep them full until lunchtime.

I have used apple and almond as the main flavors in this recipe. Add the ingredients to a large bowl and mix well. You can also customize it in so many ways to make something that your own family will love. Cocoa and banana is another favorite in my house, along with vanilla and orange, yum!

This is also a great recipe to make in a big batch. Store it in a glass or mason jar. It will keep well in the fridge for a couple of days, you may just need to add a little extra milk if it thickens up too much.

  • Grate the apples.  You will need one cup grated.
  • Add the oats, milk, yogurt and almond butter to a large bowl and mix well with a spoon.
  • Stir in the grated apple, cover the bowl with a lid or plastic film and place in the fridge for at least an hour or overnight.
  • If the overnight oats are a little too thick to eat, simply add some milk to loosen them up.
  • The oats will keep covered in the fridge for two days.

will this work for old fashioned or steel cut either one? Also, we have a dairy allergy here so can I just omit yogurt or should I replace with a little more milk? Thanks for your help!

I made this with Bob’s Red Mill Muesli for the oats, the last of my homemade pumpkin seed yogurt, the last of my sunflower seed milk, fresh almond butter, and two organic galas. I saw an overnight recipe on the back of the Bob’s Red Mill Muesli bag. Now I see so many overnight oats recipes by looking for recipes for the new batch of almond butter. Glad I found this one. Simple and delicious. Tonight I’m trying pecan yogurt.

Yummy! I did add some maple syrup and topped it off with honey roasted almond slices. My kids wouldn’t eat it because of the texture but my husband and I enjoyed it!

Variation on a theme. I’ve been making this for years but chop apples and I use quite a bit of cinnamon. I make four jars at a time. Periodically I shake them up when I’m in the ‘fridge. I have a container made up of slivered slmonds, broken walnuts, sunflower seeds and dried cranberries. You’re right. Delicious and nutritious. Can be eaten any time of the day.
