Hi! Tiffany here from Feel Great in 8 here. I’m super excited to be back here on Super Healthy Kids! I want to share a simple healthy recipe I know your kids will love!

4 Ingredient Cheesy Carrot Crackers

These four ingredient crackers (yep, literally just 4 ingredients – and one of them is a vegetable!) are the perfect homemade substitute to a certain neon orange cracker lots of kids love. My kids devour this healthy snack and would never even guess they are packed with healthy real food ingredients!

Now, I do need to warn you…they aren’t neon orange like the store bought kind. Real carrots and cheese aren’t neon. 😉

I love that that’s a lesson my kids are learning young – to look for and choose real food options, not fake, bright, neon colors. I hope it’s one they always remember. And, of course, I try hard to have lots of healthy real-food snack options in the fridge or pantry. This recipe is definitely a favorite.

All you need to make these crackers is carrots, sharp cheddar cheese, whole grain flour and eggs. That’s it! You can even substitute oat flour or another gluten free flour if you’re avoiding gluten.

You can also make these fun crackers into any shape you and your kids want! After rolling out the dough you can use any shape of cookie cutter to make fish shape crackers, stars, hearts, bunnies or even bears. The sky is the limit!

Make sure to have your little ones help cut out the shapes too. My kids love to help in the kitchen and they always eat more of the healthy foods they help me make.

Instructions

  • Preheat oven to 350 degrees F.
  • Mix the grated carrot and water in a microwave safe bowl. Cover and cook in high for 3 minutes.
  • Drain the carrots and then use a clean cloth to squeeze out the excess liquid.
  • Put the carrots, cheese and eggs in a food processor and pulse until well blended. You can process them more or less, depending on the texture you want. The more you do, they less obvious the carrot will be. 😉
  • Add the flour 1/4 cup at a time, pulsing in-between, just until you reach a dough consistency. You don’t want it to be too sticky, or too dry.
  • Lightly flour your work surface, roll the dough to 1/4 inch thick and cut to desired shapes. I just used a pizza cutter to cut long strips and then small 1 inch squares.
  • Put shapes on a cookie sheet covered with parchment paper or a silicone baking mat. Sprinkle with a little course sea salt (optional).
  • Bake for 15-20 minutes or until they are crispy and slightly brown on the edges.
  • Store leftovers in an airtight container.

I’m wondering about egg substitutions. I’ve used applesauce and gel eggs with good results. Wondering what you would suggest. Thanks!

So disappointed. I made these today and they came out like a little squares of bland. Was it because are used white flowers it’s all I had on hand? I would like to try them again and hope that they will come out nice and crunchy.

Made these today with my four year old. It’s a fun and easy recipe that he was able to do most of with minimal help. We followed the recipe exactly, other than substituting dairy free cheese due to allergy. Texture was great, the flavour is decent but I agree they’re pretty bland. I whipped together some coconut milk yogurt and powdered peanut butter and now my son is dipping and eating happily 🙂

My dough became too sticky. I couldn’t even cut the shapes. I ended up adding 1 more cup of flour and the crackers became very hard. Any advice?

I followed the recipe, but maybe I should have packed the cheese? They looked ok but tasted like cardboard 🙁 Should I have added more salt?

Kids liked them, I thought they were bland. We did not poke holes in them and they puffed up kind of like little breadstick bites. Next time I’ll poke some holes and add a bit more salt or some other seasoning.

I mixed salt for taste and greens and different cheese . I just mix the pure with the dough and spread it. And salt on top it was so good.

…i made this today but i couldn’t get the mixture to turn out into a dough…even after adding another half cup of flour, it’s still very sticky. so disappointed …what could have i done wrong?

Wondering if anyone has tried these with any other vegetables – pumpkin, sweet potato, zucchini (courgette)…???

Ok, so I too could not see where it was a workable dough, however I greased my half sheet pan with coconut oil, and spread them out, baked, than lowered the temp and left in oven to dry out. Excellent! Very flavorful cracker. Will make again, and change nothing.

Hi Melody! We haven’t calculated the exact number of crackers that equals a serving size, but the recipe is intended to serve four people. I hope this helps you portion the crackers how you like.

Love the idea of this. Our dough was crazy sticky, though. They’re in the oven anyhow, so we will see….

Simple to make.
The 5 kids and adults were keen to eat them.

They each took a bite, were surprised and commented:
~ What are they meant to taste like?
~ They have no flavour
~ Did you forget to add the flavour / cheese / seasoning?

I made them again. Still flavourless.

So, the dough was admittedly sticky as people mentioned. I did not add more flour though because those people said they were too dry when they did that. I definitely put some seasonings into the dough itself and i’m so glad I did because even then they were not super flavorful.

I just worked with parchment paper to roll it out. I used a silicone roller which definitely helped as opposed to my wooden roller I began with. They took forever and were painstaking to get into squares because of the sticky factor and what I was left with was just an OK tasting biscuit type cracker.

My kids did eat them so that’s why I gave them three stars but unless you have a lot of time to invest and are not expecting cheez-it type crackers, then it might not be worth it. Thanks for the recipe though!

We haven’t tested this with any other flour- but if you are looking for a gluten free option we like King Arthur’s gluten-free flour. Let us know how they turn out for you!

I loved this recipe. It was fairly easy to make and I went ahead and did 2 batches at once Mine didn’t turn out quite so crunchy but that’s probably because I used a GF flour blend because of allergies. My toddler likes them and they are perfect for him to munch on because of the blandish taste. For adults/older children I’d definitely add some garlic powder and salt or dip them in something.

Glad to hear he enjoyed them! Yes, extra seasonings definitely make them more adult friendly. 🙂

The first batch was a fail. Initially it was way too sticky to roll so I added flour. Should have been Liberal with the seasoning. It was not good at all. Second batch I coated the dough with a bit of oil before rolling… Added good amount of seasoning. It was good. Dint poke holes so it puffed. You need to tweak this recipe. Add more flour and a bit of oil or butter.
